Choosing the freshest Seer Fish for your weekend curry

Seer fish (Surmai / Neymeen in different markets) is a favourite for thick coconut curries and shallow fries because it holds its shape. The difference between a great plate and a forgettable one often comes down to how fresh the piece was when it left the ice — not only how you cooked it.

At FishMe we look for bright, full eyes, vivid red gills, and skin that still has a natural sheen. The flesh should spring back when pressed; if the indent stays, the fish has likely been off ice too long. A mild, clean sea smell is good; an ammonia or sour note is a sign to pass.

For curry, many home cooks prefer a medium-sized Seer with even thickness so pieces cook in the same time. If you are shallow-frying, drier surfaces help — pat portions dry, score the skin lightly, and let the pan heat fully before the first contact so the crust seals instead of steaming.

Once home, store fish at the coldest part of the fridge on a tray over ice, loosely covered. If dinner is the next day, keep it well chilled and avoid refreezing after thaw. Pair with tomatoes, kokum, or tamarind in the curry to balance the natural oiliness of Seer — and enjoy the aroma that tells you the harbour was only a short journey away.
